Effect of Information on Consumers’ Response to Different Food Categories Enriched With Brewer’s Spent Grain

Brewer’s spent grain (BSG) has been commonly considered as only a waste product, but recent research on its composition shown that it can be functional ingredient. The aim of this study was to analyze consumers’ attitude toward different BSG-added food products under informed conditions. BSG-enriched bread, pasta, and chocolate milk were studied exploring two major aspects. First, the eye-tracking technology used reveal effect labels attention purchase intention. Information sustainability BSG varied among analysis. best response occurred when label displayed: logo, fiber source claim, description. phrase “Malted Barley” an appellation also analyzed, although did not produce significant consumers. Second, responses fiber-enriched regular products, conditions, assayed through sensory evaluations. For bread samples, no difference found in acceptability between versions. other hand, consumers expressed preference terms overall liking version. accepted much ones information provided, confirming importance claim claims.
